Coffinettes – Rakvičky

Makes: 30

Prep: 35 minutes
Bake at 300°F (150°C) for 11 minutes
Bake at 250°F (120°C) for 40 minutes
Cooling: 10 minutes
Total time: approx.. 1 ½ hour

Ingredients:

4 egg yolks (M size eggs)
1 egg (M size)
1 ½ cup powdered sugar (230g)

1 Tbsp melted unsalted butter for molds

  • Melt 1 Tbsp unsalted butter and brush very good all the molds. Set each on a baking tray. All 30 should fit on one baking tray. They need to bake all at the same time, because the batter would not work if it sits for long.
  • Into the stand mixer add 4 egg yolks, 1 egg and 1 ½ cup powdered sugar. Mix with spatula or whisk. Continue mixing with stand mixer with whisk attachment. Mix on high for 3 minutes. After 3 minutes of mixing, mix the batter with spatula to make sure there is no sugar on the bottom of the mixer. Continue mixing for another 4 minutes on high. After total of 7 minutes batter should increase in volume, get lighter in color and after you lift up the whisk, batter should create a line that isn’t runny and stays for little bit. In that case batter is ready.
  • Preheat the oven to 300°F (150°C).
  • Add whole batter into a piping bag, cut the end of the bag (if using plastic bag) and put batter into molds little over 1/2 way.
  • When oven is preheated put tray into the oven and set timer for 11 minutes. They need to rise. After 11 minutes (at least that was enough in my oven) immediately lower the temperature to 250°F (120°C) and bake for 40 minutes. Even after lowering the temperature they will keep rising.
  • Take the tray out of the oven and let rakvičky sit in the molds for 10 minutes.
  • Wiggle the sites of the mold, turn upside down and remove each out of the mold.
  • Add unsweetened whipped cream on top and enjoy.

When you hand wash the molds, be careful. The edges can be sharp.

Store them in a dry place, covered in a plastic bag or a closed container. Pantry or kitchen counter will work good. They should last about 2-3 weeks. Add the whipped cream right before serving. They are hollow and some people like to put whipped cream also inside.

    1. Vsak tyto jsou taky duty. Jine bych ani nedelala. 😉 Ano nekdo dava slehacku i dovnitr. Nam staci jen nahore, ale diry v nich jsou, tak se urcite da dat slehacka i dovnitr.

    1. I just updated the post 🙂 Store them in a dry place, covered in a plastic bag or a closed container. Pantry or kitchen counter will work good. They should last about 2-3 weeks. These shouldn’t be frozen. These go into the same category like meringues or pavlova. Dry pastry.
