1 3/4 cups (250g) all purpose flour, plus more for dusting the pastry board
1 cup (150g) powdered sugar, plus more for dusting the cookies
1 lemon for zest
2 egg yolks
1 1/2 sticks (170g) unsalted butter, at room temperature
