Beehives – Včelí úly


Ingredients:

Makes 24-30
Prep: 10 minutes
Rest: 1 hour
Bake: 350F 8 minutes
Cool off: 15 minutes
Total time: about 2 hours

Linzer bottom
1/2 cup all purpose flour
1/3 cup powdered sugar
1 egg yolk
1/2 stick (4 Tbsp) unsalted butter, at room temperature

Dough
2 cups walnuts
1 1/2 cups powdered sugar, sifted
1 egg white
1 tsp rum

Filling
1 3/4 powdered sugar, sifted
2 Tbsp unsalted butter
1 egg yolk
2 1/2 Tbsp rum

  3. I just got my molds.. I’m looking forward to using them.. I have a question? In USA we have concerns of useing a raw egg.. The walnuts mixture has a raw yolk.. Is that a problem?

    1. Hi Rich, walnut mixture has raw egg white and filling raw egg yolk. We use raw eggs in other recipes as well and never had issues with it. I know there is a risk of salmonella. I would buy organic eggs. I don’t mind using raw egg when some alcohol is involved in the recipe like these cookies and eggnog.

  4. I made these for my Czech husband as he remembers them fondly. He finds the filling just too sweet. It is essentially icing, and there is already a lot of icing sugar in the moulded hive. Is there a less sweet filling that is also used in the CR, perhaps a vanilla pudding or a rum flavoured custard? I am thinking of scraping the icing out of the hives and replacing it. And next time, I will try a different filling.

    When making these hives, my dough was so sticky that it did not come out of the moulds easily. I was wondering what I could do when I noticed some graham wafer crumbs left over from the rum balls. I added these to the dough. They firmed up the dough and did not change the flavour.

    1. You can reduce amount of sugar in the dough. Instead of 1 1/2 cups just do 1 cup. I did them this year here in the Czech Republic also like that. I wouldn’t change the filling. The reduced sugar in the dough will make a difference in sweetness. Mine are never sticky. That is why I worked so hard to create recipe which doesn’t stick. If it would be too sticky add more ground walnuts. I hope that helps.
